These little suckers are LITERALLY my favorite food right now and I prep them every Sunday for the week ahead and have two for breakfast. They are great pre/post workout snacks or perfect at night as a healthy dessert treat. Mix in a big bowl with a fork: 3 ripe bananas (the darker, the better) 6 eggs or 1.25 cups of egg whites (believe it or not, I prefer egg whites – they make the muffins fluffier and lower calorie) 1/3 cup coconut flour 6 scoops of protein powder (I like BioChem Vanilla Whey protein you can get at Whole Foods or Amazon) 0.5 cup chopped walnuts 1 tbs of All Spice or Trader Joe’s Pumpkin Pie Spice or 1 tbs of Cinnamon with 1 tbs Nutmeg
